Sapodilla or Manilkara zapota is a tropical fruit that contains a source of protein, sugar, vitamin C,
minerals and phytochemicals. Sapodilla leaves are believed to be a traditional medicine used to treat
several diseases. In this research, a wax coating composed of long and medium chains of carbon atoms is
used, which is a hydrophobic material. The source of wax depends on the source, there are natural and
synthetic. This research aims to determine the effect of waxing and applying fungicides on maintaining the
quality of sapodilla fruit. The ingredients used are sapodilla fruit, fungicide (Benlate 50), wax,
triethanolamine (TEA), oleic acid and distilled water. The method used is an experimental method with 3
treatment factors. A1 without fungicide, A2 Addition of fungicide, B1 without wax, B2 4% wax, B3 12%
wax, C1 at room temperature, C2 at cold temperature. Sapodilla fruit was observed every day of the week.
Storing sapodilla fruit at room temperature resulted in a decrease in weight loss compared to cold
temperatures. Weight loss is a natural process that is influenced by many factors such as physiological and
environmental. This is because storing sapodilla at room temperature increases respiration and
transpiration, so that with this process the rate of water loss increases. Storing sapodilla at room
temperature results in a greater reduction in weight loss than at cold temperatures. Weight loss is a natural
process that is influenced by many factors such as physiological and environmental. The addition of a wax
coating also has a big impact on the freshness of sapodilla fruit. The freshness of fruit is assessed by color,
texture and weight loss. Wax can prevent respiration and transpiration which affects weight loss and causes
delays in growth, maturity and color.
