Banana and papaya are climatic fruits. The ripening process is carried out using the ripening technique. This study aims to determine the effect of time and type of paper/plastic wrapping on banana and papaya ripening. The research method we conducted was an experimental method carried out with 3 treatments, in the form of bananas and papayas that were ripened using newsprint, plastic wrap, and without wrapping. The quality of organoleptic properties in the form of taste, texture, aroma and colour. The results showed that the treatment using newsprint can accelerate the ripening process. The conclusion from the results showed that the length of marinating and the type of wrapping paper had a significant effect on texture, flavour and aroma.
